- For grilled paneer-
- 100 gms paneer
- 1 tbsp hung curd
- 1/2 tsp tandoori masala
- 1/4 tsp mustard seeds
- Few drops lemon
- 1/8 tsp turmeric powder
- 1/8 tsp ginger garlic paste
- 1/2 tsp red chilli powder
- as per taste Salt
- as required Oil
- 1/4 tsp kasuri methi
- For grilled elephant foot-
- 50 gms elephant foot
- 1/2 tsp kokam juice
- 1/2 tsp red chilli powder
- 1/4 tsp turmeric powder
- 1/4 tsp garam masala
- 1/4 tsp ginger garlic paste
- as per taste Salt
- 1 tbsp rice flour
- For Stir fry veggies-
- 1 bowl mixed veg (ivy gourd, capsicum, green peas, onion, carrot)
- 1/2 tsp soya sauce
- as per taste Salt
- 1/2 tsp oil
- 2-3 finely chopped garlic
- For lemon rice-
- 1/2 bowl washed rice
- 1 tsp lemon juice
- 1 tbsp washed urad and chanadal
- Few Curry leaves
- 1 tsp oil
- 1/2 tsp turmeric powder
- as per taste Salt
- as required Water to cook rice
- 1/8 tsp crushed ginger
- for tomato rice-
- 1 tsp oil
- 1/2 tsp mustard seeds
- few curry leaves
- 1 tbsp washed urad and chana dal
- 1 chopped onion
- 1 chopped tomato
- 1/2 tsp ginger garlic paste
- 1 tsp red chilli powder
- 1/4 tsp turmeric powder
- as per taste Salt
- 1 bowl washed rice
- as required Water to cook rice
Instructions to make to make 2 states delight
- Marinade all the above ingredients with paneer add oil on a pan and grill till golden.
- Marinade all the above ingredients with elephant foot, coat with rice flour, put oil on tawa and grill till cooked and crisp.
- Heat a pan add oil fry crushed garlic, add in veggies saute it by adding salt and soya sauce. Do not over cook.
- Heat oil, temper with mustard seeds and curry leaves, add in washed dal and crushed ginger, saute for a while, add turmeric powder and salt, now add water lemon juice and washed rice and take 3 whistles.
- Heat oil, temper with mustard seeds and curry leaves, add in washed dal and ginger garlic paste, saute for a while, add red chilli powder, turmeric powder and salt, now add onion and tomato and cook well till you get a nice gravy now add washed rice and take 3 whistles.
- For plating, brush some homemade tomato chuttney, place salad if you want, I've made carrot and cucumber rose and plate it as per your choice, and serve hot.
